Surrounded by wild forests and protected parkland, the coffee benefits from rich biodiversity, volcanic soils, and 70% natural shade, creating an exceptional environment for slow cherry development and remarkable cup quality.

Carefully harvested at peak ripeness, the cherries underwent density sorting through flotation before entering sealed tanks for a 72-hour anaerobic fermentation. The coffee was then dried on raised African beds inside a greenhouse for 28 days and rested in a climate-controlled warehouse to ensure stability and consistency.
DILGO combines high-altitude volcanic terroir with a long anaerobic fermentation, resulting in a coffee of exceptional depth and complexity. The combination of wild forest shade, nutrient-rich soils, and meticulous processing creates a distinctive expression that is both vibrant and refined.
